They are very common in England to, where I am from, but most are made with meat.
Last night, I did some Potato and Mushroom Pasties. They were very delicious and satisfying. Below is the recipe.
Ingredients:
- 4 tablespoons of butter
- 2 large baking potatoes peeled and sliced
- 2 handfuls of sliced mushrooms
- 2 garlic cloves chopped
- 2 springs of thyme, parsley, rosemary, thyme chopped
- 2 store bought pie crusts
- flour for dusting
- shavings of fresh Parmesan cheese
- 1 teaspoon coarse kosher salt, divided
- 1 large egg white, beaten to blend
Directions
Heat butter in heavy large skillet over medium heat. Add mushroom until brown on each side. Add chopped herbs and garlic towards the last five minutes. Season with salt and pepper. Cool.
Peel and slice potatoes to about 1/4 inch. Par boil until halfway cooked (can also microwave in a small amount of water covered with plastic wrap for about 7 minutes), drain and let cool.
Combine potatoes and mushrooms gently.
Preheat to 375°F. Roll out each dough disk on a lightly floured surface. Cut in half. Put potato and mushroom mixture onto one side of the pastry dough, sprinkle with the cheese. Fold over, and pinch the edges together using the tines of a fork. Brush dough with some egg white.
Brush each pastie with egg white. Cut 3 slits in each top crust.
Place on greased cookie sheet and bake for 30 minutes until golden brown, turning sheet around halfway through.
Cool 10 minutes; serve with a salad!.
